Tonkotsu is where Matsunoki began. Our rich pork-and-chicken broth is the foundation of the house, deep, layered, and built to the same exacting spec every single day, at both Portland shops. Springy noodles, a proprietary tare we don't talk about, and chashu that falls apart on cue. It isn't magic. It's care, measured exactly. If it's your first visit, start here. The Tonkotsu Shoyu is the front door to the whole menu: the broth at its purest, the noodles at their springiest, the bowl we hold every other bowl against. Regulars graduate to the Black Garlic Shoyu, the guest favorite, or the Spicy Garlic, for people who want the heat to mean something.

  • What is tonkotsu ramen?

    Tonkotsu is a rich, savory style of ramen broth made by simmering pork bones until the broth turns silky and deeply flavorful. Ours blends pork and chicken for a broth that's rich without being heavy, deep, layered, and the same in every bowl, every visit.

  • What makes Matsunoki's tonkotsu different?

    Consistency, engineered on purpose. The broth is built to the same spec every day, seasoned with a house tare we keep to ourselves, and finished with springy noodles and slow-cooked chashu. Same bowl, every time, at both Portland shops.

  • Is tonkotsu ramen gluten-free?

    No. We offer a keto-friendly noodle substitution on any bowl, but the seasoning contains soy sauce, so no bowl is fully gluten-free even with the swap. Guests avoiding gluten by preference enjoy the substitution; guests with celiac disease should talk with the team before ordering.

  • Can I get it spicy, or not spicy at all?

    Both. The Spicy Garlic brings real, flavor-forward heat. The Tonkotsu Shoyu and Black Garlic Shoyu have none. Kitchens at both shops will make a mild version of most bowls if you ask.

  • Is there a vegan version?

    Every bowl on our menu has a 1:1 vegan twin built on its own clear, double-soup vegan broth, not a substitute, a sibling. See our Vegan Ramen page.

  • Which bowl should a first-timer order?

    The Tonkotsu Shoyu. It's the bowl that started the shop, and the best way to taste what we mean by precision. Add the jumbo chicken tenders, regulars will tell you the same thing.
